摘要
本试验以湘西蜜桔皮为原料,酒石酸为提取溶剂,通过单因素试验,结合响应面,优化湘西蜜桔皮水溶性膳食纤维提取工艺.结果表明:酒石酸质量分数和加热回流时间为显著因素,加热回流时间对结果的影响大于酒石酸质量分数,蜜桔皮水溶性膳食纤维的最佳提取工艺为加热回流时间为2.3 h、溶剂质量分数3%、料液比1∶16 g·mL^-1,湘西蜜桔皮SDF得率为33.2%,该工艺条件可靠、结果稳定,为湘西蜜桔的综合开发利用提供了科学依据.
In this study,tartaric acid extraction method was used to determine the optimal extraction process of water-soluble dietary fiber from western Hunan citrus peel by single factor test combined with response surface.Results show that the tartaric acid mass fraction and heating reflux time are significant factors;heating reflux time has greater influence than tartaric acid mass fraction.The best extraction technology to obtain water-soluble dietary fiber from citrus peel is to use tartaric acid mass fraction 3%,material liquid ratio 1:16 g·mL,and 2.3 hours heating reflux time.Using this method,the yield of water-soluble dietary fiber is 33.2%.This method generates reliable,stable results and provides a scientific basis for comprehensive exploitation and utilization.
