摘要
本文着重对传统发酵食品的安全性和微生物纯种分离技术在传统发酵食品中的应用展开分析,通过了解微生物发酵机理提升现代发酵食品制作工艺和食品品质,在缩短发酵周期的同时确保发酵食品的安全性,为未来微生物纯种分离技术在传统食品中的应用提供借鉴。
This paper analyzes the safety of traditional fermented food and the application of microbial purebred separation technology in traditional fermented food,and the modern fermentation technology and food quality were improved by understanding the mechanism of microbial fermentation,it can shorten the fermentation period and ensure the safety of fermented food,which can be used for reference in the research of traditional food in the future.
