摘要 壳聚糖是自然界中天然存在的一类碱性多糖,因其具有良好的理化性质、生物相容性、抗菌性和生理活性而广泛应用于食品、化工、医药、环保等诸多领域。本文对壳聚糖的抗菌性进行探究,综述了壳聚糖的抗菌机理、壳聚糖抗菌性的影响因素,并介绍了壳聚糖在水果涂膜处理、肉制品保鲜、果汁保藏等食品领域的应用。 Chitosan is a kind of natural alkaline polysaccharide.It has been widely used in food,chemical industry,medicine and many other fields because of its excellent physical and chemical properties,biocompatibility,antibacterial and physiological activity.In this paper,the antibacterial properties of chitosan were studied that the antibacterial mechanism of chitosan and its influencing factors were summarized.The application of chitosan in fruit coating treatment,meat products preservation,juice preservation and other food fields was mainly introduced.
