摘要
目的监测山东大学市售畜肉中β-受体激动剂含量,为食品行业监管和暴露风险评估提供依据。方法2014—2019年,在山东大学采集不同市场来源的畜肉及内脏,用固相萃取-超高效液相色谱串联质谱法检测其中的克伦特罗、莱克多巴胺、沙丁胺醇、特布他林,并分析残留水平。结果六年共检测畜肉397份,β-受体激动剂检出率20.15%(80/397),其中克伦特罗检出率最高为15.62%(62/397)。采自农贸市场的畜肉中β-受体激动剂检出率明显高于采自超市的样品(P<0.01),羊、牛类样品中β-受体激动剂检出率明显高于猪类样品(P<0.05),内脏样品中的检出率明显高于肌肉(P<0.05)。结论山东大学畜肉中克伦特罗检出较多,牛、羊养殖、屠宰、销售等环节的监管需要加强,牛、羊肉特别是内脏中β-受体激动剂暴露风险较高。
Objective To monitor the contents of β-receptor agonists in livestock-meat marketed in Jinan city, and to provide a basis for livestock-meat industry regulation and the exposure risk assessment thereof. Methods Livestock-meat and offal were collected from different market sources in Jinan city from 2014 to 2019. Solid-phase extraction coupled with high-performance liquid chromatography tandem mass spectrometry was used to detect the contents of clenbuterol, ractopamine, salbutamol and terbutaline, and then their different residual levels were analyzed. Results A total of 397 livestock-meat samples were tested in the six years, and the detection rate of β-receptor agonist was 20.15%(80/397), of which the detection rate of clenbuterol was the highest( 15.62%,62/397). The detection rates of β-receptor agonists were significantly higher in livestock-meat samples collected from farmers’ markets than in ones collected from supermarkets( P< 0.01),higher in beef and mutton samples than in pork samples( P<0.05),and higher in offal samples than in muscle samples( P < 0. 05). Conclusions The detection rate of clenbuterol is higher in livestock-meat marketed in Jinan city. Supervision of cattle and sheep breeding,slaughter and sales needs to be strengthened. There is a higher risk of exposure to β-residual agonists in beef and mutton,especially in viscera.
