山西红枣质量安全风险因子检测与分析 被引量:5

Detection and Analysis of Quality Safety Risk Factors of Ziziphus jujuba from Shanxi Province

摘要 基于红枣质量安全风险分析原则,对山西红枣质量安全风险因子(农药残留、重金属污染和食源性致病微生物)进行了调查研究。2015年对采自山西运城、临汾、晋中、吕梁等地的100个红枣样品农药残留进行检测,结果显示,共检出氯氰菊酯、氯氟氰菊酯、氯菊酯等9种农药,平均检出率为10%,残留超标率均为0;重金属污染检测结果显示,重金属铅、镉、砷、铬和镍检出率分别为10%、25%、0、100%和75%,其中,铬超标率为5%,其余4种超标率均为0。2017—2018年,对采自山西大同、太原、晋中、临汾、长治、吕梁等地的100个红枣样品的表面微生物进行检测,结果显示,大肠菌群、金黄色葡萄球菌、沙门氏菌3种致病菌都有检出,检出率分别为3%、19%和5%,超标率为1%~5%,其他杂菌检出率为81%;2017—2018年对从农贸市场和土特产商店采集的枣夹核桃20个产品的表面微生物进行检测,结果显示,致病菌大肠杆菌、金黄色葡萄球菌和沙门氏菌平均检出率分别为70%、60%和55%,超标率分别为70%、20%、55%,其他杂菌检出率为100%。 Based on the risk analysis principles of jujube quality safety,the quality and safety risk factors(pesticide residues,heavy metal pollution and food borne pathogenic microorganisms)of Shanxi jujube were investigated.In 2015,100 jujube samples from Yuncheng,Linfen,Jinzhong,Lüliang and other places in Shanxi province were detected for pesticide residues.The results showed that nine pesticides of cypermethrin,cyhalothrin,permethrin,etc.were detected in the jujube samples,with an average detection rate of 10%and a residue exceeding standard rate of 0.The detection results of heavy metal pollution showed that the detection rates of lead,cadmium,arsenic,chromium and nickel were 10%,25%,0,100%and 75%,respectively.Among them,5%of the samples were over the MRL for chromium in food,while contamination level of all the samples was below the MRLs for other 4 heavy metals.From 2017 to 2018,100 samples of red jujube were collected from Datong,Taiyuan,Jinzhong,Linfen,Changzhi,Lüliang and other places in Shanxi province.The results showed that E-coli,Staphylococcus aureus,and Salmonella were detected on the surface of the jujube samples with the detection rates of 3%,19%and 5%,respectively,the over standard rate was 1%-5%,and the detection rate of other miscellaneous bacteria was 81%.From 2017 to 2018,the surface microorganisms of 20 jujube sandwiched walnut products collected from farmers’markets and local specialty stores were detected.The results showed that the average detection rates of pathogenic bacteria such as Ecoli,Staphylococcus aureus and Salmonella were 70%,60%and 55%,respectively,and the over standard rates were 70%,20%and55%,respectively,and the detection rate of other miscellaneous bacteria was 100%.
