摘要
紫苏籽是药食两用植物紫苏[Perila frutescens(L.)Brit]的种子,它含有多种营养物质,是优质的食品原料和油料资源。近几年,随着紫苏籽产量的增加,紫苏籽深加工技术也得到快速发展。该文总结了紫苏籽的营养成分和保健作用,并综述了国内外紫苏籽深加工的研究现状,主要对紫苏籽油、蛋白质、活性多糖、黄酮类物质、酚酸类物质以及α-亚麻酸等深加工产品的研究进展进行了阐述,并对紫苏籽未来发展进行了展望,以期为紫苏籽深加工研究产业化发展提供理论参考。
Perilla seed is a seed of Perila frutescems(L.)Brit,which was a high-quality food raw material and oil resource.In recent years,with the increase in the production of perilla seeds,the deep processing technology of perilla seeds had also developed rapidly.Summarize the nutrients and health effects of perilla seeds,and review the research status of deep processing of perilla seeds at home and abroad,mainly on perilla seed oil,protein,active polysaccharides,flavonoids,phenolic acids and flax.The research progress of deep processing products such as acid was expounded,and the future development of perilla seed was prospected in order to provide theoretical reference for the industrialization development of perilla seed deep processing research.
