摘要
畜禽血是畜禽屠宰加工最大的副产物之一,其营养含量高,富含各种活性物质,可将其深度开发加工为广泛利用于食品、饲料、医药、保健、化工等行业的高附加值产品,如亚硝基血红蛋白、血红蛋白、血纤维蛋白、血浆蛋白、免疫球蛋白、血红素铁、SOD、凝血酶等。对其畜禽血利用途径、开发产品及其研究进展进行了概要综述。
Livestock and poultry blood is one of the largest by-products of livestock and poultry slaughtering and processing.It has high nutrient content and is rich in various active substances.Livestock and poultry blood can be deeply developed into high value-added products which belong to food,feed,medicine,health care,chemical and other industries fields,including nitroso hemoglobin,hemoglobin,fibrin,plasma proteins,immunoglobulins,heme iron,SOD and thrombin.This paper gave a summary of its utilization,development products and research progress in those fields.
