摘要
西餐工艺模块化教学满足应用型本科烹饪与营养教育专业目标定位的需求,文章研究介绍了西餐工艺课程模块化教学体系的构建,并对西餐实践课程的教学评价体系进行了探究。
Module-based education of western food technology satisfies the requirements for training students in cooking and nutrition education in applied undergraduate universities.This paper introduces the structure of module-based education of western food technology,and explores the evaluation system of western food practice course.
