洛阳市某冷冻饮品企业含乳冷冻饮品加工过程中单核细胞增生李斯特氏菌污染状况 被引量:10

Contamination status of Listeria monocytogenes in the production process of milk-containing frozen drinks in Luoyang

摘要 目的了解洛阳市中小企业含乳冷冻饮品生产加工过程中单核细胞增生李斯特氏菌的污染分布情况。方法选取洛阳市一家冷冻饮品企业,采集生产加工过程各个环节的样品,参照GB4789.30-2016进行单核细胞增生李斯特氏菌检测。结果共检测样品253份,检出单核细胞增生李斯特氏菌135份,检出率为53.36%;食品样品、环境、人员、仪器设备、包装、工具、其他类样品的单核细胞增生李斯特氏菌检出率差异有统计学意义(χ~2=40.045,P<0.05),其中工具类检出率最高(73.08%);前处理区、灌装区、整箱包装区检出率分别为55.06%、48.51%、33.33%,检出率差异无统计学意义(χ~2=4.266,P>0.05);二季度检出率为49.61%,三季度检出率为49.19%,两次采样检出率差异无统计学意义(χ~2=0.004,P>0.05)。结论该企业生产加工各环节单核细胞增生李斯特氏菌污染较为严重,交叉污染风险高。 Objective To investigate the pollution distribution of Listeria monocytogenes in the production process of milk-containing frozen drinks of small and medium-sized enterprises in Luoyang so as to provide scientific basis for food safety supervision and management. Methods We collected 253 samples from all aspects of production process of a frozen beverage company in Luoyang. The samples were tested according to the National Food Safety Standard Food Microbiology Test(GB4789.30-2016). Results A total of 253 samples were monitored, and 135 strains of Listeria monocytogenes were detected with the detection rate being 53.36 %. The difference in the detection rate of Listeria monocytogenes in food samples, environment, personnel, equipment, packaging, tools, and other samples was statistically significant( χ~2=40.045,P<0.05), with the highest detection rate of tools(73.08 %). The detection rate of pre-processing area was55.06 %, the detection rate of the filling area was 48.51 %, and the detection rate of the packaging area was 33.33 %. The detection rate in the second quarter was 49.61 %, and the detection rate in the third quarter was 49.19 %. There was no significant difference in the detection rate between the two quarters( χ~2=0.004,P>0.05). Conclusions The enterprise existed serious pollution of Listeria monocytogenes and high risk of cross contamination in the production process.
