摘要
肉品检疫直接关系到人民食品安全,然而由于缺乏科学准确的死宰猪肉鉴别诊断方法,死宰猪肉流入市场的现象时有发生。本文通过对猪肉中的过氧化物酶和血红蛋白进行研究,建立了一种以猪肉中过氧化物酶浓度和血红蛋白残留浓度为双靶标的鉴别诊断方法,可有效鉴别区分死宰猪肉和屠宰猪肉,准确率在95%以上。
Meat quarantine is associated with food safety.However,due to the lack of scientific and accurate method for identification and diagnosing of diseased pork,the diseased pork entering the market occurs very often.Through the study on peroxidase and hemoglobin in pork,a diagnosis method with peroxidase concentration and hemoglobin residue concentration as two targets was established.This method can effectively distinguish diseased pork from slaughtered pork,with the accuracy of above 95%.
