摘要
富硒茶成为人体补硒的一个重要来源,富硒茶的研究已经成为热点之一.本文以硒对植物生理生化指标的影响,硒对茶中有效成分影响,硒与植物营养元素的互作关系和影响富硒茶浸出率因素4个科学问题为主线,梳理近年来的文献发现:外源硒可以有效提高植物中的硒含量和生物量,根据植物种类与施硒量的不同,增幅也不相同,其中对茶中的含硒量可增加至362~486ug/kg,增产6.8%~18.4%,同时降低茶中12.79%茶多酚的含量,增加32.67%氨基酸含量;对花茶滁菊中硒含量可增加76.64%~114.14%,增产16.38%~24.01%,同时增加滁菊总黄酮含量3.35%~10.76%,提高SOD、CAT活性,降低MDA含量.并且硒与土壤中的植物营养元素也有一定的互作关系,且通过对硒的浸出率进行研究,根据国家富硒茶含硒量标准0.25~4.00mg/kg,计算出每日饮茶15g实际获得的硒大致为1.5~24ug,表明富硒茶既具有安全性又有利于人体对硒的吸收.文献的调研指出了富硒茶种植和浸泡过程的主要影响因素,为其他名优特色植物富硒茶的研制提供了理论依据.
Selenium-enriched tea, an important source of selenium supplement for human body, has gained much attention in research in recent years.This paper takes four scientific issues as the main line, namely, the effect of selenium on plant physiological and biochemical indexes, the influence of selenium on active components in tea, the interaction between selenium and plant nutrient elements, and the factors affecting the extraction ratio of selenium-rich tea.Literatures in recent years indicated that exogenous selenium can effectively improve the selenium content and biomass in plants, and plant species and selenium application amount will affect the increase rate..For example, the selenium content in tea was increased to362ug/kg^486ug/kg, and the yield could be increased by 6.8%~18.4% Meanwhile, the polyphenols content in tea was reduced by12.79%, and the content of amino acids was increased by32.67%.While the selenium content in chuju flower tea was increased by 76.64%~114.14%, the yield was increased by16.38%~24.01%, and the flavonoids content in chuju flower tea was increased by3.35%~10.76%.Meanwhile, the activity of SOD and CAT was increased, and the content of MDA was decreased.In addition, Selenium also interacted with plant nutrients in soil.In accordance with the national standard for selenium content of selenium enriched tea 0.25 mg/kg^4.00 mg/kg, the study on extraction ratio of selenium showedthat the actual selenium obtained by drinking tea15 g every day is approximately1.5~24 ug, which indicates that selenium enriched tea is not only safe, but also conducive to human body's absorption of selenium.Literature research pointed out the main influencing factors of selenium-enriched tea planting and soaking process, which provided a theoretical basis for the development of other famous and characteristic plant selenium-enriched tea.
