摘要
【目的】针对豫南香稻种质资源稻米中各种氨基酸含量进行检测,分析其香米中氨基酸含量的差异,为优质香稻新品种的选育提供参考。【方法】以豫南香稻种质资源共18个香稻品种的香米米粉为试验材料,利用酸水解法进行处理,随后采用全自动氨基酸分析仪测定并分析其香米中氨基酸的含量。【结果】豫南香稻种质资源材料中,不同香稻品种香米的氨基酸总含量存在明显差异,黑香稻193与信香粳1号稻米中总氨基酸含量相差23.33 mg·g^-1;总的必需氨基酸含量变异较大,其变化区间是25.13~34.13 mg·g^(-1);18个香稻品种稻米的限制性氨基酸含量以及芳香族氨基酸含量的变异丰富,其中赖氨酸含量最高的是矮杆香稻丸品种,且该品种稻米中的杂环族氨基酸含量也都相对较高。【结论】通过对豫南香稻种质资源稻米中的氨基酸含量进行检测与分析,发现18个香稻品种中的氨基酸含量存在明显差异,这将为今后选育高营养品质的香稻新品种提供重要的香稻种质资源。
【Objective】In order to provide important reference for selection the new fragrant rice varieties with high quality, the contents of various amino acids of germplasm resources of fragrant rice in the Southern Henan province were detected and the difference of amino acid contents in the fragrant rice was also analyzed.【Method】The fragrant rice flour was treated by the acid hydrolysis method, then the content of amino acids in the 18 fragrant rice varieties of rice germplasm resources in the South Henan province was determined and analyzed by the automatic amino acid analyzer.【Result】The total amino acid content of different fragrant rice varieties was obviously different among the germplasm resources of fragrant rice in the South of Henan province. The difference of total amino acid content between Heixiangdao 193 and Xinxianggeng 1 was 23.33 mg·g-1. The total essential amino acid content varied greatly from germplasm resources of fragrant rice in South Henan, and the range of its variation was between 25.13 and 34.13 mg·g-1. The content of limiting amino acid and aromatic amino acid content of 18 fragrant rice varieties varied greatly, and the highest content of lysine was the Aiganxiangdaowan. Meanwhile, the content of heterocyclic amino acids was also abundant in the Aiganxiangdaowan.【Conclusion】Through the detection and analysis of amino acid content in the fragrant rice varieties of rice germplasm resources in the South Henan province, it was found that there were obvious differences in the content of amino acids in the 18 varieties of fragrant rice, which will provide important germplasm resources of fragrant rice for breeding new varieties with high nutritional quality in the future.
