摘要
目的:初步探索不同成熟度桑椹多酚绿原酸含量变化及其抗氧化活性。方法:用AB-8大孔树脂纯化桑椹多酚,HPLC测定桑椹多酚纯化物中绿原酸含量,并通过总抗氧化能力(T-AOC)测试测定桑椹多酚纯化物的抗氧化活性。结果:绿原酸含量青桑椹多酚>红桑椹多酚>黑桑椹多酚;3种成熟度的桑椹多酚的总抗氧化活性为青桑椹多酚>黑桑椹多酚>红桑椹多酚,3种成熟度桑椹多酚的抗氧化活性大小随着桑椹多酚浓度的增大而增强。结论:桑椹多酚的绿原酸含量随着其成熟度越高而逐渐减小;桑椹多酚具有抗氧化活性,总抗氧化活性随着桑椹多酚浓度的增大而增强,但与绿原酸单一成分变化没有直接联系。
Objective:To preliminary explore the chlorogenic acid content change in different maturity mulberry and its antioxidant activity. Methods:Mulberry polyphenols were purified with AB-8 macroporous resin,the content of chlorogenic acid in mulberry was determined by HPLC,and the antioxidant activity in different maturity mulberry was measured. Results:Chlorogenic acid content in purified green mulberry polyphenols was more than that in purified red mulberry polyphenols,and chlorogenic acid content in purified red mulberry polyphenols was more than that in purified black mulberry polyphenols.The antioxidant activity of three maturity mulberry polyphenols increased with the increase of mulberry polyphenol concentration. Conclusion:The content of chlorogenic acid decreased with increasing maturity.Mulberry polyphenol has antioxidant activity,the total antioxidant activity was enhanced with the increase of mulberry polyphenol concentration,but is not directly related to the change of single component of chlorogenic acid.
