菊苣红枣口服液研制及对人体有氧运动后抗疲劳效果研究 被引量:11

摘要 以菊苣和红枣为原料,辅以柠檬酸与羧甲基纤维素钠,制备菊苣红枣口服液。以感官评分为衡量指标,通过单因素与正交试验确定口服液的最佳配方为:菊苣汁5%、红枣汁15%、柠檬酸0.5%、羧甲基纤维素钠0.3%,感官评分达到86.76分。在此基础上,以血清中尿素氮含量和乳酸含量为衡量指标,观察菊苣红枣口服液对人体有氧运动后抗疲劳效果。研究结果显示:试验组人员饮用该口服液进行跑步运动后,血清中尿素氮含量平均值为10.21mmol·L^-1,乳酸含量平均值为6.23mmol·L^-1,均显著低于对照组(p<0.01),表明菊苣红枣口服液有助于减少运动时体内蛋白质分解代谢,抑制乳酸生成,从而改善运动后机体疲劳状态。 The chicory and jujube was regarded as raw materials, with citric acid and sodium carboxymethylcellulose to prepared chicory and jujube oral liquid. The liquid formula that composition of above materials was optimized with taking sensory evaluation as the reference index by single factor and orthogonal experiments. The results showed that the best sensory evaluation score was 86.76 score with chicory juice 5%, jujube juice 15%, citric 0.5%and sodium carboxymethylcellulose 0.3%. On this basis, The anti-fatigue function of body after sporting was inves-tigated with taking the levels of serum urea nitrogen(BUN)and blood lactate(BLA)in serum as the reference index. The results showed that compare with control group, the average concentration of BUN and BLA of experimen-tal group that drink the liquid, which 30 minutes before aerobic exercise starting was only 10.21 mmol·L^-1 and6.23 mmol·L^-1, respectively. Because of these results all obviously less than control group, then reflect that it could contribute to decrease the disassimilation of protein and inhibit the lactic acid generation, improve fatigue state of body after exercise.
