摘要
微生物脂肪酶可以催化酯类化合物的分解、合成和酯交换,因而被广泛应用于食品、精细化工和医药等工业中.近年来,随着界面酶学、有机相催化以及固化技术的不断深入和发展,微生物脂肪酶的诸多新特性正在被发现,其应用领域也在不断拓展.国内外的研究结果表明,用微生物脂肪酶可以催化合成多种芳香酯,并且在有机相中微生物脂肪酶的催化活性和稳定性较水溶液中明显提高;用微生物脂肪酶催化合成芳香酯可以克服用化学方法合成带来的问题,是一种芳香酯合成的有效方法.
<Abstrcat>The microbial lipase could be extensively used in food,fine chemistry,and medicine industry because it could catalyze decomposition,synthesis,and exchange of the esters.Recently,with the further development of interfaceenzyme and calalysis in organic phase as well as immobilized technology,many new characters of microbial lipases are being discovered,while their application fields are being extended.The recent studies show that various flavor esters has been obtained by using microbial lipases as a catalyst.Furthermore,in organic solvent both the catalytic activity and stability of microbial lipase are obviously higher than theirs in an aqueous environment.The synthesis of flavor esters by microbial lipase could overcome the problems associated with chemical processes so that it is thought to be a valuable method.
