本文主要讨论了两种不同来源的大豆纤维,分析了大豆纤维在食品中的应用及其保健作用,提出了在当前大豆制品的开发热中,开发大豆纤维前景广阔。
This paper discussed the sources, applications and health benefits of soybean fiber. Development of soybean fiber is promising in the worldwide exploitation of soybean products.
