摘要
为给青皮核桃的贮藏保鲜提供理论依据和数据支持,以强特勒、晋龙、清香、香玲等品种和混品(各个品种的混合)为供试品种,采用PE40、PE50两种厚度的气调袋包装,以鲜果保鲜剂作熏蒸处理,研究了不同熏蒸和气调袋处理对不同品种核桃贮藏期间核仁含水率的影响情况。试验结果表明:冷藏第0~45天,每隔15 d核仁含水率显著下降1次,冷藏第45天后,其含水率呈不显著的上升趋势,而冷藏第60天其含水率分别上升至冷藏第45天、第30天的水平,冷藏第75天其含水率上升至冷藏第30天的水平,冷藏第90天其含水率上升至冷藏第15天的水平;各品种的核仁含水率,清香最高,香玲最低;各熏蒸处理的核仁含水率均显著高于不熏蒸处理的;不同厚度气调袋对核仁含水率的影响均不显著。文中综合分析认为:为了保持较高的核仁含水率,保留其口感,青贮核桃冷藏应选择熏蒸处理,以PE40的气调袋包装,以此方法和气调袋处理与包装的清香品种核仁的贮藏品质最优。
In order to provide the theoretical basis and data support for the storage and preservation of Peel the walnuts, the varieties of Mixer, Jinlong, Qingxiang, Xiangling and mixed products (mix of various varieties) were used as tested varieties, and PE40 and PE50 thicknesses were used. The air-conditioned bags were packaged with fresh fruit preservatives for fumigation treatment. Effects of different fumigation and atmosphere-modulated bags on the moisture content of different kernels during storage were studied. The results showed that the moisture content of the nucleolus decreased significantly once every 15 days from 0 to 45 days after cold storage. After the 45th day of cold storage, the water content showed no significant upward trend. On the 60th day of cold storage, the moisture content increased to At the 45th and 30th days of refrigerating, the moisture content on the 75th day of refrigeration increased to the level on the 30th day of refrigerating, and on the 90th day of refrigerating, the moisture content increased to the level on the 15th day of refrigerated storage; the nucleolar moisture content of each variety. The fragrance was the highest, and the fragrance was the lowest. The moisture content of the nucleolus of each fumigation treatment was significantly higher than that of the non-fumigation treatment. The effect of the airbags of different thickness on the nucleus moisture content was notsignificant. The comprehensive analysis in the article concludes that: in order to maintain a high nucleus moisture content, to retain its taste, silage walnut refrigerated should choose fumigation treatment, to P40 air-conditioned bags, and air- conditioned bags processed and packaged fragrance varieties nucleolus storage quality is optimal.
