摘要
近年来营养健康备受关注。如何在人口持续增长,耕地不断减少,温室气体排放等多重矛盾交织的情况下,保障人类对蛋白质的需求,面临着严峻的挑战。植物蛋白将是弥补人类对蛋白质需求的必然选择,其中植物蛋白模拟肉是一类重要的动物蛋白替代品。高水分挤压技术具有高效、节能、无污染等特点,是目前最有前景的模拟肉新型加工技术之一。本文系统阐述了高水分挤压技术的特点与研究现状,全面分析了高水分挤压技术的发展机遇和面临的挑战,并指出其发展方向和研究重点,旨在为高水分挤压技术的理论研究和推广应用提供参考。
Recently, nutrition health has received much attention. How to ensure the demand for protein by human beings in the context of continuous population growth, declining land space and greenhouse gas emissions is a challenge facing humanity. Vegetable protein will be an inevitable choice to make up for human demand for protein, and vegetable protein-based meat analogue is one of the important animal protein substitutes. High moisture extrusion technology, which is characterized by high efficiency, energy saving and pollution-free, is the one of the most promising processing technology for meat analogues. The objectives of paper are to expound the characteristics of high moisture extrusion technology systematically; to summarize the research status of extrusion process; to analyze the developing opportunities and challenges of high moisture extrusion technology comprehensively; and to point out its future development direction. This could provide a reference for the theoretical research and industrial application of high moisture extrusion technology.
