摘要
比较研究了磷酸与柠檬酸水溶液提取紫甘薯色素的工艺参数。考察了酸浓度、料液比、提取时间对紫甘薯色素提取的影响。结果表明:两者在料液比均为1∶20,磷酸水溶液在较低浓度(1.5%)和较短提取时间(2 h)的条件下提取紫甘薯色素的效果较3%柠檬酸的好。紫甘薯色素提取液经大孔树脂纯化后色价达到34.86,与柠檬酸提取液纯化的效果基本一致。以磷酸替代柠檬酸提取紫甘薯色素,有酸浓度低、提取时间短等特点,具有一定的实用价值。
The extraction method of pigment from purple sweet potato using phosphoric acid aqueous solution asextracting solvent was compared with citric acid aqueous solution. The extraction conditions including concentration ofphosphoric acid or citric acid, solid- liquid ratio, extracting time were investigated by single factor experiment andorthogonal experiment, respectively. Results indicated that the effect of purple pigment extracted by phosphoric acidaqueous solution with a lower concentration and a shorter extracting time was better than that of citric acid aqueous solutionunder the same solid-liquid ratio ( both were at 1 " 20). And the color value of purple pigment obtained by purification ofmacroporous resin from extracting solution of aqueous phosphoric acid solution was 34. 86, which was similar with that ofaqueous citric acid solution. It may be practical using phosphoric acid aqueous solution instead of citric acid aqueoussolution for extraction of pigment from purple sweet potato.
