摘要
本文以日本晚樱的果实为提取材料,用pH 3乙醇提取其红色素。通过在不同条件下日本晚樱果实红色素吸光度变化的研究,探讨了其在不同pH、光照、温度、容器和食品添加剂环境条件下的稳定性。结果表明:日本晚樱红色素的最大吸收波长为535 nm;pH值小于4时日本晚樱红色素的稳定性好;铁和不锈钢容器显著影响红色素的稳定性;光照强度超过800 LUX,照射3 h以上,红色素的吸光度显著下降;60℃以上的温度对日本晚樱红色素液稳定性影响显著;60 mg/m L及以上的蔗糖浓度对红色素稳定性有显著影响;Nacl、VC对日本晚樱红色素稳定性均无显著影响。
In this study the fruit of Prunus lannesiana was chosen as experimental materials, red pigment was extracted with pH 3 ethanol. The stability of fruit red pigment of Prunus lannesiana was studied by the change of absorbance under different conditions of pH, light, temperature, container and food additives. The results showed that the maximum absorption wavelength of fruit red pigment of Prunus lannesiana was 535 nm, when pH value is less than 4 the fruit red pigment of Prunus lannesiana was stable, These elements or conditions affected the stability of fruit red pigment significantly as follows: the iron and stainless steel containers, light intensity over 800 LUX with irradiation more than 3h, temperature over 60℃, concentration of sucrose not less than 60 mg/m L, meanwhile Nacl, VC had no influence on the stability of the fruit red pigment.
