货架期是衡量速冻食品品质稳定性的一个重要指标。对影响速冻食品货架期的因素进行了系统介绍,并简述了速冻食品货架期的预测方法以及研究进展,为今后速冻食品货架期研究提供了参考。
Shelf life is an important index to measure the quality stability of quick frozen products. The factors that affect the shelf life of quick-frozen products were systematically introduced, then the methods of predicting shelf life and the research progress were briefly introduced, which would provide reference for the research of shelf life of quick-frozen products.
