葡萄酒生产中连续酒石稳定技术应用的体会

摘要 引进了意大利生产的酒石稳定系统,经2年的生产使用,证明该系统处理的葡萄酒冷稳定性和热稳定性都能过关,可提高葡萄酒的质量。在使用中积累了经验:(1)系统的制冷量应足够大,2.5t/h产量的系统应不小于62.8kJ/h×2的制冷量。(2)极化冷冻结晶罐容积应足够大,每个罐容积不少于3m3,且第一罐的温度回升不能超过-3.8℃。(3)葡萄酒在酒石处理前,应先过滤等。(丹妮) The Italian tartar stalilization facilities were introduced in the prodution of wine.Two years application of the facilities had confirmed its reliability in the management of thermostability and cold stability of wine and its application could effectively improve the quality of wine.Some experience was illustrated in this paper:1.adequate refrigerating capacity was required for the facilities,gener-ally,at least62.8kJ /h×2refrigerating capacity for the facilities with2.5t/h output ;2.adequate capacity was required for crystalliz-ing tanks with the volume of each tank at least3m 3 ,besides,the temperature of the first tank should recover less than at-3.8℃;3.wine should be filtrated before tartar management.(Tran.by YUE Yang)
