不同来源的粗饲料对育肥牛牛肉氨基酸及脂肪酸组成的影响 被引量:14

Effects of different dietary sources of roughage on amino acid and fatty acid composition in cattle meat

摘要 试验旨在研究不同来源的粗饲料对育肥牛牛肉氨基酸及脂肪酸组成的影响,为苎麻这种优质饲料资源在反刍动物中的应用提供依据。选择500 kg左右的西门塔尔肉牛9头,随机分为3个处理,每个处理3头牛,每个重复1头牛,粗饲料分别饲喂酒糟,稻草秸秆、青贮高粱、青贮苎麻+玉米秸秆。试验结果表明:1在牛肉的氨基酸组成方面,3个处理组差异不显著(P>0.05);在氨基酸分类组成中,青贮苎麻与玉米秸秆组甜味氨基酸的含量高于青贮高粱组7.57%(P<0.05),但和酒糟、稻草秸秆组的差异不显著(P>0.05);在鲜味氨基酸、酸味氨基酸、苦味氨基酸的含量方面,青贮苎麻与玉米秸秆组均高于酒糟、稻草秸秆组和青贮高粱组,但差异不显著(P>0.05);23个处理组饱和脂肪酸的含量差异不显著(P>0.05);多不饱和脂肪酸(PUFA)含量方面,青贮苎麻+玉米秸秆组较青贮高粱组提高了8.06%,差异显著(P<0.05),但低于酒糟+稻草秸秆组(P<0.05);青贮苎麻+玉米秸秆组较酒糟+稻草秸秆组n-3多不饱和脂肪酸的含量显著提高(P<0.05),但低于青贮高粱组(P<0.05);n-6多不饱和脂肪酸含量方面,青贮苎麻+玉米秸秆组较青贮高粱组显著提高了11.74%(P<0.05),但低于酒糟+稻草秸秆组(P<0.05)。综上所知,在饲喂肉牛的日粮中添加苎麻,并不影响肉牛的品质和营养价值,并对牛肉中的风味氨基酸和脂肪酸的组成有一定程度的改善和提高,可在反刍动物饲粮中推广使用。 The experiment was aimed to study the (influence of composition of amino acid and fatty ac- id in beef cattle) providing a reference for the application of ramie in ruminant animals.Nine 500 kg body weight Simmental Bulls were cheese and randomly divided into three groups with three cattles per group,and eattles in different groups were fed three diets with lees + straw, silage sorghum and si- lage ramie with corn straw. Experimental results show that: (1) in the amino acid composition of beef, there is no significant difference between three treatment groups(P〉0.05); in the classification of amino acid composition, silage ramie with corn straw is higher than silage sorzhum group 7.57%(P〈0.05 insweet amino acid, but group no significant with vinasse, straw stalks difference (P〉O.05); In umami amino acids, sour taste amino acids, and the bitter taste of amino acids, ramie with corn straw silage group were higher than vinasse, straw and silage sorghum group, but no signifi- cant difference (P〉0.05); rated fatty acid content (2) three groups of satu- of no significant differ-ence (P〉0.05); content of polyunsaturated fatty acids (PUFA), silage ramie with corn straw is increased by 8.06% with silage sorghum, significant difference (P〈0.05), but lower than that of vinasse, straw stalks group (P〈0.05); Ramie with corn straw silage than vinasse, straw stalk group significantly in- creased the content of n-3 polyunsaturated fatty acids (P〈0.05), but lower than that of silage sorghum group (P〈0.05); n-6 polyunsaturated fatty acid content, ramie and corn straw silage group increased by 11.74% in the silage sorghum group (P〈0.05), but lower than that of vinasse, straw stalks group (P〈 0.05). The results indicated that ramie is added in the diet feeding cattle, does not affect the quality of beef cattle and nutritional value and flavor amino acids and fatty acid composition of beef by a certain degree of improvement and improve, and can be used widely in the ruminant animal fodder.
