摘要
试验旨在研究不同性别成年武定鸡腿肌和胸肌中氨基酸含量的差异。应用高效液相色谱仪检测腿肌和胸肌冻干粉中的17种氨基酸,测定结果按部位、性别分别进行分析比较。结果表明:(1)武定鸡肌肉中谷氨酸含量最高,其次是天冬氨酸、赖氨酸、亮氨酸、精氨酸、丙氨酸;(2)武定鸡腿肌和胸肌中的氨基酸含量差异显著(P<0.05);(3)性别对武定鸡腿肌的氨基酸含量影响显著(P<0.05),而对胸肌的氨基酸含量影响不显著(P>0.05)。结果显示,武定鸡胸肌的氨基酸总量和必需氨基酸含量高于腿肌,且公鸡的含量高于母鸡。
This paper aimed to study the gender differences of amino acid content of leg muscle and breast mus- cle in adult Wuding chicken. 17 kinds of amino acids were detected by high performance liquid chromatography for leg and breast muscle freeze dry powder. The results were analyzed and compared according to the location and sex.The results showed that glutamic acid was the highest,followed by aspartic acid, lysine,leucine, arginine,alanine in leg and breast muscle of Wuding chicken. Differences in amino acid content of leg and breast muscle were significant （P〈 0.05）.The effect of sex on amino acid content of leg muscle was significant（P〈O.05）, and there was not significant effect on amino acid content of breast muscle （P〉O.05）. The results showed that total amino acids and essential amino acid content of breast tousle in Wuding chicken were higher than those of leg muscle,and cock was higher than hen.
