摘要
目的:了解贵州省2014-2015年餐饮服务业生食水产品中的重金属元素的污染情况,为加强我省生食水产品卫生安全管理提供依据。方法:依照GB2762-2012《食品中污染物限量》,对生食水产品中铅、镉、汞(甲基汞)和砷(无机砷)的监测数据进行评价。结果:铅、镉、汞和砷的检出率均较高,2份软体动物类样品的镉和砷超标,超标率均为3.1%。结论:继续加强对贵州省餐饮业生食水产品的监督管理。
Objective:To determine the contents of heavy metals in raw aquatic products of food service industry in Guizhou Province from 201 4 -201 5 and provide a scientific basis for strengthening the food hygien-ic supervision for these products.Methods According to GB 2762 -201 2 “National food safety standards --pollutants limits in food”,the monitoring data of lead,cadmium,mercury (MeHg)and arsenic (inorganic ar-senic)in raw aquatic products in Guizhou Province from 201 4 to 201 5 were evaluated.Results The detection rates of Pb,Cd,As and Hg were relatively high,and the contents of Cd and As in two mollusc samples excee-ded the limits and the over -limit rates were both 3.1 %.Conclusion The supervision and inspection on raw aquatic products in Guizhou’s food service industry should be further intensified.
