摘要
目的:追溯曲的诞生源头及发展演变的主体过程。方法:查阅历史及近代各类有关曲的文献和资料。结果:根据用途,将曲按种类分为药用曲和酒曲两大类,并重点对神曲系统进行了阐述。结论:发现药用曲和酒曲分离的历史背景为汉代曲饼制作工艺的诞生,具体时间为曲饼诞生到《金匮要略》成书这一段时间内。
Objective： To investigate the origin and the evolution of Qu. Method： The literature and information of Qu from ancient time were reviewed. Result： According to the usage, Qu can be divided into medicinal Qu and distiller＇s yeast. Shenqu was mainly elaborated. Conclusion： The division of medicinal Qu and distiller＇s yeast dated from the craftsmanship of Qu cake to the time of Jinkui Yaolue in Han dynasty.
