摘要
目的:追溯曲的诞生源头及发展演变的主体过程。方法:查阅历史及近代各类有关曲的文献和资料。结果:根据用途,将曲按种类分为药用曲和酒曲两大类,并重点对神曲系统进行了阐述。结论:发现药用曲和酒曲分离的历史背景为汉代曲饼制作工艺的诞生,具体时间为曲饼诞生到《金匮要略》成书这一段时间内。
Objective: To investigate the origin and the evolution of Qu. Method: The literature and information of Qu from ancient time were reviewed. Result: According to the usage, Qu can be divided into medicinal Qu and distiller's yeast. Shenqu was mainly elaborated. Conclusion: The division of medicinal Qu and distiller's yeast dated from the craftsmanship of Qu cake to the time of Jinkui Yaolue in Han dynasty.
