摘要
以玉米毛油为原料、玉米赤霉烯酮(ZEN)的含量及脱除率为考察指标,研究碱炼对玉米毛油中ZEN的脱除效果和最佳工艺条件。结果表明:碱炼对玉米毛油中ZEN的脱除效果显著,碱炼条件对ZEN脱除效果的影响程度依次为碱液质量分数>超量碱>碱炼时间>碱炼温度;碱液质量分数5.11%的脱除效果明显优于碱液质量分数11.06%的,脱除率分别为93.52%和70.84%;超量碱从0.1%增加至0.4%,ZEN脱除率由45.67%增加至78.57%;在碱液质量分数5.11%、超量碱0.4%、碱炼时间20 min、碱炼温度55℃的最佳工艺条件下,玉米油中ZEN脱除率为94.63%。
With crude maize oil as raw material, content and removal rate of zearalenone (ZEN) as inde- xes, the effect and optimal conditions of removal of ZEN from crude maize oil by alkali refining were studied. The results showed that the effect of alkali refining on removal of ZEN was remarkable, and the influence of mass fraction of lye on removal of ZEN was the greatest among the four alkali refining conditions, followed by excessive alkali, alkali refining time and alkali refining temperature. The removal effect of ZEN with 5.11% lye (93.52% of removal rate) was better than that with 11.06% lye (70.84% of removal rate). With the increase of excessive alkali from 0.1% to 0.4%, the removal rate of ZEN increased from 45.67% to 78.57%. The optimal removal conditions were obtained as follows: mass fraction of lye 5.11%, excessive alkali 0.4%, alkali refining time 20 min and alkali refining temperature 55℃. Under these conditions, the removal rate of ZEN was 94.63%.
