凹凸棒石黏土-电气石复合材料对白酒催熟作用研究

摘要 为了探究凹凸棒石黏土(下简称凹土)和电气石对白酒是否有催熟作用,以天然矿物凹土和电气石为原料,采用烧结法制备3种不同配比(100%凹土、80%凹土+20%电气石以及20%凹土+80%电气石)的复合材料,将它们按一定的比例添加到新酒中,以空白酒样和加入陶土颗粒的酒样为对照,定期取样,通过感官分析、物理性质测定和气相色谱分析技术来研究不同配比组成的天然矿物颗粒对新酒的感官、p H、电导率以及其中的主要化学成分的影响。结果表明,凹土对新酒有加快老熟的功能,且其老熟效果比陶粒好。因此,在实际生产中可以考虑用凹土来加快新酒的老熟。 Palygorskite had very excellent adsorption and catalytic properties due to its unique crystal structure and small rod-like grain morphology. In order to explore whether palygorskite could accelerate the aging process of young liquor, palygorskite and electrical stone were used as raw materials to make natural mineral grains of three different proportions (100% palygorskite, 80% palygurskite+20% electrical stone, 20% palygorskite+80% electrical stone). Add them in the newly produced liquor with certain proportion, comparing with blank liquor samples and liquor samples with clay particles. Sample regularly and study the change of senses, pH, conductivity and the main chemical composition of the young liquor, which was dealt with natural mineral grains of different proportion, through the sensory analysis, mensuration of the physical properties and gas chromatographic analysis technique. The results showed that palygorskite could accelerate the aging process of young liquor and had a better effect than clay particles. So use palygorskite clay to accelerate the aging process of young liquor in the subsequent practical production.
