摘要
针对消费者质疑市场上米糠油产品标注保质期为18个月的现状,选择了300 m L玻璃瓶、300m L PET瓶和5 000 m L PET瓶3种小包装米糠油（未添加抗氧化剂）进行货架期（15~20℃）试验,并分析了Schaal烘箱法和Rancimat法在预测米糠油货架期方面的准确性。结果表明：水分及挥发物含量、酸值和过氧化值均随储藏时间的延长而增大;300 m L玻璃瓶装米糠油品质最好,货架期可达15.5个月,300 m L PET瓶和5 000 m L PET瓶装米糠油品质其次,货架期分别为10.5个月和7.4个月,但三者均未达到18个月;Schaal烘箱法与Rancimat法在预测米糠油货架期方面基本无差异,分别为6.9~10.3个月、6.5~9.2个月,两法所预测的货架期与PET瓶装的米糠油货架期接近。
For the situation of consumers questioning the 18 months shelf life of rice bran oil product in market,the shelf life（ 15- 20 ℃） experiments of rice bran oils in three kinds of containers were carried out including 300 m L glass bottle,300 m L PET bottle and 5 000 m L PET bottle,and the accuracy of Schaal oven- storage method and Rancimat method for predicting the shelf life of rice bran oil was analyzed. The results showed that moisture and volatile matter content,acid value and peroxide value of rice bran oil increased with storage time prolonging. The quality of rice bran oil in 300 m L glass bottle was the best,followed by 300 m L PET bottle and 5 000 m L PET bottle. The shelf lives of rice bran oils in 300 m L glass bottle,300 m L PET bottle and 5 000 m L PET bottle were 15. 5 months,10. 5 months and 7. 4months respectively,but all of them failed to reach 18 months. There was no difference between Schaal oven- storage method and Rancimat method in predicting the shelf lives of rice bran oils,which were6. 9- 10. 3 months and 6. 5- 9. 2 months respectively. The shelf life predicted by the two methods was similar with that of rice bran oil in PET bottles.
