摘要
嗜热蛋白质是来自于嗜热微生物中的一种热稳定性高的蛋白质,其在高温下可以长时间保持活性而不变性失活,因此在生物化工等领域有着广阔的应用前景.蛋白质氨基酸的组成一直被认为是与嗜热蛋白质热稳定性有关.本文主要介绍了精氨酸、半胱氨酸、脯氨酸、异亮氨酸、亮氨酸、谷氨酰胺、苯丙氨酸、天冬酰胺残基与蛋白质热稳定性的关系.
Thermophilic protein from thermophilic microorganisms is a high thermostability protein, it can be kept for a long time activity and inactivation of invariance under high temperature, so it has broad application prospects in the biological chemical industry. The protein composition has been considered to be related to thermophilic protein thermal stability. This paper mainly introduces the arginine, cysteine, proline, isoleucine,leucine, glutamine, phenylalanine, asparagine residues and the relationship between thermal stability.
