摘要
研究了浙江省八种常见食用菌的蛋白质、氨基酸、可溶性糖和10种营养元素的含量,同时还对食用菌中的硝态氨、亚硝态氨以及有害金属元素包括砷、镉、铬、镍、钛等进行了系统测定。
The contents of crude protein,essential and nonessential amino acids,soluble sugar and ten kinds of nutrient elements in eight kinds of the common mushrooms encountered in Zhejiang province had been investigated.On the other hand,the contents of nitrate and nitrite in fresh mushroom,as well as the contents of detrimental metal elements including arsenic,cadmium,chromium,aluminium,nickel and titanium were determined systematically.
