摘要
对一种可食用的野生蓝藻-念珠藻(NostoccommuneVauch.)的营养成分进行了分析。结果表明,每100g干制的藻体中,含水分8.640g,蛋白质30.135g,脂肪0.502g,碳水化合物37.256g,粗纤维4.405g,灰分15.210g,此外还含有丰富的必需氨基酸、维生素和矿物质。该研究表明念珠藻是一种营养丰富并具有开发利用价值的藻类。
