摘要
主要阐述了利用淡水鱼中养殖量较大的青、草、鲢、鳙等鱼种加工成多种味型的调味鱼肉松系列方便食品的研究情况及研究方法,确定了较为合理的工艺步骤及工艺配方,对淡水鱼的加工和利用具有一定的指导和参考价值。
This paper mainly described the status and methods of research on a wide variety of flavor type dried fish meat floss processing techology by using high yield freshwater black carps,grass carps,silver carps,big head fish and etc.as raw materials.The reasonable processing steps and formula were determined,which had certain guidance and reference value to the utilization of freshwater fish.
