摘要
本文通过试验,在使用国产设备的中、小型面粉厂,使用短粉路的生产工艺,在不影响生产特制粉和标准粉的质量条件下,对提取不同用途的预混合专用粉进行了研究,摸索出了生产面包、蛋糕和华夫饼干预配合专用粉的配方;基础粉的品质指标和工艺过程.
The process of short mill flow system is utilized in flour mills of medium and small size where domestic equipments are used through the experiment in this paper.On condition that the quality of special flour and standard flour is not influenced, this paper studies how to extract the previous mixed tailored flour of different functions.And the paper also gropes for the prescriptions of the previous mixed tailored flour for producing bread, cake and Hua Fu biscuit and the quality target and the technical process of base flour.
