摘要
本文测定了河虾加工下脚料的成分,研究了蛋白酶对河虾加工下脚料作用的最适条件,分析了采用酶法回收的蛋白质提取物的组成及性质,提出了采用酶法和化学法相结合的综合利用河虾加工下脚料的工艺路线。
The contents of the components in freshwater shrimp procesing wastes were determined, the optimum conditions of proteolytic enzyme to hydrolyze shrimp wastes were investigated, and the composition of the extract recovered from shrimp wastes by enzymatic hydrolysis as well as the molecular weight distribution of protein hydrolysate, were measured. The technology of comprehensive utilization. by using a combined method with chemical and enzymic treatments was developed.
