摘要
本文概述了国外学者自六十年代以来有关万寿菊色素的研究工作,介绍了万寿菊色素的提取、精制、主要成分的分离、定量分析的方法以及组分的结构和性质,同时也讨论了万寿菊色素用做食品添加色素的可能性。
This paper summarizes the research work of marigold pigments foreign scholars have done since 1960's. It introduces the extraction, refining, component separation, quantity analysis of the colorants and presents their components, structures and properties. It also deals with the possibility of using these colorants in food.
