摘要
最近十年中 ,由于能源危机与环境问题的日益严重 ,曾被人们冷落的固态发酵再次引起人们的兴趣 ,固态发酵工程在基质特性、染菌控制、水活度的控制、pH的调控、传质与传热等领域的研究取得了较大的进展。论文着重综述最近固态发酵工程在上述领域取得的一些重大的发展 。
In last about ten years, solid-state fermentation (SSF), which was previously termed as a low-technology system, has raised an unprecedented increase in interest, and has been changing drastically. This paper reviews previous and current developments in engineering aspects of SSF mainly including substrates (pretreatments and uptake of substrates , specialties of substrates,sterilization of substrates), relevant conception of sterility and control of process parameters (water activity, aeration and mass transfer, temperature and pH).
