摘要
研究了在酸性条件下从豆腐加工废水中提取高纯度多糖、水溶性多糖和大分子量多糖的提取条件以及水溶性多糖和大分子量多糖的胶凝作用、乳化特性和单糖组成。结果表明 ,大分子量多糖产生于提取过程中 ,水溶性多糖由阿拉伯半乳聚糖组成 ,一些多糖组成在提取过程中分解成木糖和鼠李糖 。
Yield, gelation, emulsifying properties and sugar composition of polysaccharids extracted from tofu processing wastewater under acidic conditions at different temperature levels and incubation times were studied. Optimum extraction for water-soluble polysaccharides was at pH 1.5, 100 ℃ over an incubation period of 6.0 hours. Most of the water-soluble polysaccharides extracted under strong acidic conditions and above 80 ℃ remained fluid while most of those extracted within the range of 45~80 ℃gelled. The water-soluble polysaccharides extracted were found to consist of arabinogalactans. Some polysaccharide components were found to have decomposed into xylose and rhamnose during the extraction process. Pure polysaccharides exhibited better emulsifying properties than the water-soluble polysaccharides.
