摘要
紫陀螺菌〔Gomphuspurpuraceus (Iwade)Yokoyama〕蛋白质含量较高 ,脂肪含量较低 ,并含有多种矿质元素及多种维生素。紫陀螺菌的谷氨酸、蛋氨酸、维生素B1、维生素B2 、铁、锌、硒含量特别高 。
The main nutritive components in the fruitbodies of Gomphus purpuraceus (Iwade) Yokoyama were analyzed and compared with that in several other common edible fungi in this paper. The results showed that the fruitbodies of Gomphus purpuraceus had a higher protein content, a lower fat content and various mineral nutrients and vitamins. Among all these components, the contents of Glu, Met, vitamin B 1, vitamin B 2, Fe, Zn and Se were especially high. So Gomphus purpuraceus was suggested to be with higher nutritional value.
