摘要
以绿芦笋嫩茎为试材 ,研究不同剂量 6 0 Co-γ射线对芦笋呼吸强度、品质、腐烂率的影响。结果表明 :采用 0 .5~2 .5 k Gy剂量辐射后 ,芦笋在 (2± 1 )℃下贮藏 ,贮藏初期呼吸强度有所增加 ,随后逐渐下降 ;1 5 d贮藏期内 ,辐射处理的芦笋其粗纤维含量、失重率和腐烂率均低于对照 ;维生素 C保存和感官质量指标均高于对照。冷藏绿芦笋适宜的辐射剂量为 1 .5~ 2 .5 k Gy。
The effects of different dosages of gamma radiation on respiration, quality and decay of green asparagus spears stored at (2±1) ℃ were investigated. It was observed that respiration was enhanced at the beginning of the storage period, and then it decreased gradually after the spears were irradiated with 0.5~2.5 kGy. During the 15 days storage, the spears from radiation treatments had lower fiber, weight loss and decay, had higher vitamin C and visual quality than those from control. Compared with effects of the different radiation treatments, 1.5 or 2.5 kGy dosage was the optimum for storage green asparagus spear at (2±1) ℃.
