籽瓜种子蛋白组分和生化特性的研究(简报) 被引量:13

STUDIES ON THE PROTEIN COMPONENTS AND BIOCHEMICAL CHARACTER FROM SEEDS OF SEEDY WATERMELON

摘要 籽瓜是西瓜的变种,其种子板大、味香,是人们喜爱的食品。籽瓜种子蛋白质含量约为38%,其中78%是球蛋白。Blagrove(1980)报道。南瓜、西瓜。 The dry seeds of four varieties of seedy watermelon were used as experimental materials. The seed cucurbitin from seedy watermelon were analyzed by SDS-PAGE and IEF-SDS-PAGE. The results showed that the cucurbitin has a molecular mass of 55 kD, it can be dissociated into six subunits of MW. 37kD, 35kD, 33kD, 23kD, 19 kD, and 18 kD in SDS-PAGE under reducing conditions. The 37 to 33 kD proteins are acidic subunit and their isoelectric points lay between pH 5.5 and 6.2, and the 23 to 18 kD proteins are basic subunit and their isoelectric points lay between pH 8.9 and 9.6. The three acidic subunits and the three basic subunits linked by disulphide bonds were also found in the seed cucurbitin. Therefore it is proposed that cucurbitin of seedy watermelon are homologous to leguminlike protein.
