摘要
本文简要报道云南石梓资源分布,色素提制工艺和性能,并对该色素的营养成分作初步分析,证明含有多种营养成分,具有开发利用的价值;同时应用此色素在饮料、果酒、糕团等食品上进行着色试验,以探讨云南石梓色素工业生产和普遍利用的可能性。
The Gmelina Arborea Roxb resource, its color extract and manufacture technique and color properties have been reported in this paper. This color has been proved having many kinds of nutritional ingredients and be valuable for development and utilization by preliminary analysis Meanwhile, the color tests of it have been done in beverage, wine and cake, so as to discuss the possibility of industrial production and utilization.
