摘要
转谷氨酰胺酶作为食品添加剂在食品工业中的应用越来越广泛。本文对其在肉制品、乳制品及在保健食品中的应用作了介绍,并简单阐述了转谷氨酰胺酶的作用机理。
As an additive in food industry transglutaminase is applied in more and more fields. In this paper, the enzyme' s applications in meat products and health foods were introduced . Its function has also discussed.
