摘要
介绍了通电加热的基本原理、特点、通电加热设备及通电加热在杀菌、肉制品和豆腐以及解冻等食品加工中的应用,并对通电加热的应用前景进行了分析。
This paper introduced the principle,merits and machines of ohmic heating. The uses of ohmic heating in sterilization,meat thawing and meat and tofu processing were also introduced. The applying prospect of ohmic heating in food industry was analyzed.
