摘要
采用正交设计 ,用果胶酶制剂对草莓汁进行澄清的最佳条件 :温度 5 0℃ ,pH 2 7,酶用量0 5 % (V/V)和作用时间 40min。澄清后的草莓汁其透光率可达到 97%以上 。
The result of pectoylic enzyme preparation treatment to strawberry juice by means of orthogonal design indicated that temperature 50℃,pH2.7,quantity 0.5%(V/V)and time 40 min is optimum condition of strawberry juice clarification.After clarification,transmittancy is over 97% and stabler.
