摘要
通过在四种油脂中添加适当的牛蒡乙醇提取物,在不同时间测定油脂POV值的方法.研究了牛蒡对食用油脂的抗氧化性,结果发现对茶籽油、花生油、酥油、猪油均有一定的抗氧化作用.对其作用机理作了初步的分析.
In this article, the antioxidant of Arctium Lappa L. on edible fats and oils is studied by adding just the right amount of extracted alcohol substance of Arctium Lappa L. to four kinds of fats and oils, and measuring POV at different time. The study shows that it has some antioxidant on rapeseed oil, peanut oil ,butter and lard. On this basis, a preliminary analysis is made about antioxidant mechanism of extracted alcohol substance
