两种大豆蛋白制品铁的生物利用率研究

摘要 本文通过大鼠血红蛋白耗竭-恢复试验测定了分离大豆蛋白(ISP)、浓缩大豆蛋白(CSP)、浸泡和发芽大豆粉以及强化含硫氯基酸分离大豆蛋白铁的生物利用率。结果饲以ISP和CSP饲料的贫血大鼠其Hb均未恢复到耗竭试验前的正常水平(12.4g±1.56g%)。而后3种饲料则可使铁的相对生物利用率提高到93%~98%。本文还用体外方法模仿胃肠消化条件测定了几种大豆制品的可利用铁,与生物利用率测定结果基本一致。 The bioavailability of isolated soybean protein (ISP), concentrated soybean protein (CSP), soaked soybean flour, sprouted soybean flour and ISP fortified with sulfurcontening amino acid was measured by hemoglobin depletion-re stitution test of rats. The results showed that the hemoglobin level of anemia rat fed with ISP and CSP have not restituted to normal level(2.4±1.56g%) before depletion test. But relative bioavailability of the rats fed with the other three kinds of diet have raised to 93%~98%. The utilizable iron of several soybean products was also determined in this paper by means of invitro method resembling gastrointestinal digestive condition, the results of which were the same as the bioavailability test mentioned above.
