摘要
对河南斗鸡的生长发育、产肉性能和肉质特性进行了分析测定。结果表明 :河南斗鸡早期生长速度快 ,1 2周龄公母平均体重达 1 2 66g;产肉性能优良 ,特别是胸腿肌率高达 4 4.4 3 % ;肉质好 ,营养价值高 ,1 2周龄胸腿肌蛋白质含量分别为 2 4 .75%和 2 1 .50 % ,脂肪含量分别为 0 .87%和 1 .74 %。肌肉必需氨基酸和必需脂肪酸含量丰富。同时表明 ,周龄、性别对产肉性能和肉质特性影响较小 ,而部位对肉质的影响较大。
The growth, meat performance and quality characteristics of Henan Game were determined in the study. The result indicated that the growth of early period was quick and the body weight at 12 week of age averaged 1266 g.The meat performance was good and the percentage of breast and leg meat was as high as 44.43%. The meat quality was good and the percentage of protein of breast and leg meat at 12 weeks old was 24.75 and 121.50 respectively, fat was 0.87% and 1.74% respectively, age and sex had little effect on meat quality.
