摘要
作为 2 0世纪下半叶崛起的人类学支派 ,饮食人类学的理论发展在国内有待进一步介绍。港式茶餐厅象征着香港的文化参与了全球化的进程 ,它源自对欧式户外饮食方式的模仿 ,随着饮食文化全球化趋势的发展和变化 ,港式茶餐逐渐具有了代表香港大众文化传统的深层意蕴 。
With an introduction to the anthropology of food for the second half of the 20th century,this paper discusses new theoretical approaches of the 1990s for the study of food culture as flobal commodities.Hong Kong style tea cafe symbolizes the globalization process of restaurant eating as well as cultural tradition of Hong Kong.Tea cafe begins as an imitation of European style eating-out,gradually indigenized Western menus,eating rituals,and services.Modern adaptability and constant change in both decor and menu,of this proletarian eating place,proves to be a successful local response to the omnipresent global fast food.Tea cafe helps to illuminate adaptation of Hong Kong people and culture.Hong Kong style tea cafe,recently spread overseas,becomes an important metaphor for Hong Kong identity.
