摘要
本文考察了游离AS1 398中性蛋白酶催化明胶水解反应时 ,不同温度、pH值、水解时间及酶用量等反应条件对该反应的影响规律 ,探讨了AS1 398中性蛋白酶应用于制备水解明胶工艺的可能性。
In this paper, the influences of temperature, pH value, reaction time and amount of enzyme on the hydrolysis process of gelatin by natural AS1.398 neutral protease were investigated. The possibility of AS1.398 neutral protease applied in technology for preparation of gelatin hydrolyzate was discussed.
